Curried Chicken Sandwich
Yields1 Serving
 2 large boneless chicken breasts, poached in chicken stock
 1 small clove of finely chopped garlic
 2 stalks of celery, chopped
 1 Granny Smith apple, cored and diced
 Chopped walnuts (optional)
 1 small red onion, finely sliced
 1/4 cup sultanas
 Fresh lemon juice to taste
 Salt & white pepper
 3 tbsp mayonnaise
 1 tbsp curry powder
 4 large fresh croissants

Cut cooked chicken into large cubes & put in a bowl.

Add the garlic, celery, apple, onion, walnuts & sultanas. Mix together & then add lemon juice & curry powder.

Stir in mayonnaise & season to taste.

Put the chicken salad in the fridge for 30 minutes to allow flavours to blend together.

Cut croissants lengthwise, add Romaine leaves & then add the chicken salad.

Serve with a fresh garden salad & balsamic, citrus vinaigrette.
