It’s not officially fall without a recipe including pumpkin spice! These cookies are delicious and would make a wonderful addition to your Thanskgiving (or Halloween) dessert charcuterie board. Enjoy!
- 3 cups flour
- 2 tsp ground ginger
- 2 tsp ground pumpkin spice
- ¼ tsp ground nutmeg
- 1/8 tsp ground clove
- 1 tsp baking soda
- ¼ tsp salt
- ¾ cup butter, softened
- ¾ cup brown sugar, firmly packed
- ½ cup molasses
- 1 egg
- 1 tsp vanilla
Preheat oven to 350˚.
Sift flour, ginger, pumpkin spice, nutmeg, clove, baking soda, and salt in a large bowl.
Beat butter and brown sugar on medium until light and fluffy.
Add molasses, egg, and vanilla to sugar mixture. Mix well and scrape down bowl.
Gradually beat in flour mixture on low until well incorporated.
Press dough into flat disk, wrap in plastic and chill for at least 4 hours.
Roll out dough to ¼” thick.
Cut out desired shape (pumpkins, ghosts, leaves?)
Place 1” apart on parchment lined baking tray
Bake 8-10 minutes until edges are set and just beginning to brown
