Ontario Pear Crisps with Goat Cheese and Red Walnuts

Honey Balsamic Dressing
 1 cup Balsamic vinegar
 1 ¼ cup olive oil
 1 ¼ cup canola oil
 ½ tbsp. mustard powder
 6 tbsp honey
 ½ tbsp tarragon – finely chopped
 2 tsp salt
 2 tsp pepper

 1 firm Ontario pear
 ½ cup water
 ¼ cup granulated sugar
 6 oz herbed goat cheese
 ¼ cup red or regular walnuts
 Honey, to drizzle

Combine all ingredients in a blender, season to taste and refrigerate until needed.

Using a mandolin or vegetable peeler, thinly slice the pear lengthwise.

In a small pot over medium-high heat, bring water and sugar to boil, stirring occasionally; continue boiling [do not stir] for 5 minutes. One by one, place slices of the pear in syrup and cook for 1 minute. Remove the pear slices with a slotted spoon and arrange them on a parchment-lined baking sheet in a single layer. Bake in 200°F (100°C) oven until crisp and dry, about 2 hours. Allow to cool completely on rack.

Place 1 tsp (5 mL) of goat cheese on each pear slice, top with walnuts. Drizzle with honey.
