Ontario Pear Crisps with Goat Cheese and Red Walnuts

Ingredients
Honey Balsamic Dressing
- 1 cup Balsamic vinegar
- 1 ¼ cup olive oil
- 1 ¼ cup canola oil
- ½ tbsp. mustard powder
- 6 tbsp honey
- ½ tbsp tarragon – finely chopped
- 2 tsp salt
- 2 tsp pepper
Ontario Pear Crisps with Goat Cheese and Red Walnuts
- 1 firm Ontario pear
- ½ cup water
- ¼ cup granulated sugar
- 6 oz herbed goat cheese
- ¼ cup red or regular walnuts
- Honey, to drizzle
Instructions
Honey Balsamic Dressing
- Combine all ingredients in a blender, season to taste and refrigerate until needed.
Ontario Pear Crisps with Goat Cheese and Red Walnuts
- Using a mandolin or vegetable peeler, thinly slice the pear lengthwise.
- In a small pot over medium-high heat, bring water and sugar to boil, stirring occasionally; continue boiling [do not stir] for 5 minutes. One by one, place slices of the pear in syrup and cook for 1 minute. Remove the pear slices with a slotted spoon and arrange them on a parchment-lined baking sheet in a single layer. Bake in 200°F (100°C) oven until crisp and dry, about 2 hours. Allow to cool completely on rack.
- Place 1 tsp (5 mL) of goat cheese on each pear slice, top with walnuts. Drizzle with honey.
- Makes approximately 20 pieces.
