SERVES 4

 Salad

  • 1 can chickpeas, drained and rinsed
  • 2 cups snap peas, sliced
  • 4 ears corn, charred
  • 8 to 10 dates, charred
  • 1 bunch green onions, thinly sliced
  • 1 bunch chives, minced
  • 1/2 cup fresh mint, chopped
  • 1/2 cup parsley chopped
  • 1/2 cup feta, crumbled
  • 1 fresno chili, minced
  • Roasted pumpkin seeds, for garnish 

Aleppo Lime Vinaigrette 

  • 2 limes, juiced 
  • 3 tbsp rice vinegar 
  • 1 garlic clove, crushed
  • 1 tsp aleppo pepper 
  • 1/4 cup olive oil 
  • 1 tsp salt 
  • 2 tsp honey 
In a large bowl, toss all salad ingredients together and dress lightly with vinaigrette, slowly adding more if needed, being cautious not to overdress. Divide salad into four bowls and enjoy!

Radius' Charred Corn & Chickpea Salad

This month. we’ve got one of Plank’s best- sellers; ‘Take a Bao’. If you haven’t tried this on their menu yet, try it here or get yourself down to Plank ASAP!

Fried Chicken: 

1. Cut 3-4 boneless, skinless chicken legs into 1 inch pieces, place into a container and cover with Buttermilk, set aside for at least 20 minutes, or in the refrigerator overnight.
2. When ready to fry, preheat a pot with an appropriate amount of canola oil to 350F, then set up a bowl to bread your chicken.
3. In a bowl place 3 cups of flour, and 1.5 cups of cornstarch. Add the following spices to your preference, or our way with:

• 2 tablespoons garlic powder
• 2 tablespoons onion powder
• 2 tablespoons paprika
• 1 teaspoon cayenne
• 2 teaspoons salt
• 2 teaspoons pepper

4. Mix ingredients together. Next; remove your chicken pieces from buttermilk and add to your breading mixture. Mix thoroughly, and pat down on the chicken to really get the breading to set.

5. Add chicken in small batches to oil and fry for 4-5 minutes, carefully turning chicken as needed. Season with a small amount of salt and add to sauce immediately!

Bourbon Heat Glaze

• 1 cup gochujang
• 1 cup honey
• 1 cup water
• 1 tablespoon rice wine vinegar
• 1 tablespoon brown sugar
• 1 teaspoon bourbon (optional)
• 2 minced garlic cloves
• 1 teaspoon of minced ginger
• 1 teaspoon paprika

Combine ingredients into a small pot or pan. Bring to a simmer and reduce slightly. Toss your fried chicken right into the glaze!

Sesame Aioli

• 1 cup of Mayonnaise
• 1 tablespoon sesame oil

Mix ingredients together and drizzle over bao buns.

Plating

1. Steam your bao buns in a colander over a pot of boiling water with a lid. (or microwave for 10-20 seconds).
2. Stuff bao buns with your fried chicken glazed in Bourbon heat sauce.
3. Top with pickled cabbage, drizzle sesame aioli.
4. Garnish with chopped chives and sesame seeds.

Serve immediately and enjoy!

Take a Bao

This divinely versatile and refreshing chutney goes well with just about anything! Try it at Community Restaurant, shown here with their delectable Dosa, or make it at home with this fabulous recipe!

 

INGREDIENTS

• 1 cup red onion

• 1.5 cups roasted red pepper, chopped

• 2 tbsp fresh ginger, grated

• 1 tsp red pepper chili flakes

• 7 cups frozen mango

• 1 cup orange juice

• 1 + 2 tbsp cup water

• 4 tbsp apple cider vinegar

• 1/2 cup sugar

• 2 tsp each of ground coriander, cumin

• 1 tsp each of salt & pepper

 

METHOD

1. Sauté 2 tbsp water, red onion, ginger, chili and spices. Cook for 5 minutes.

2. Add mango and all remaining ingredients and cook for 25 minutes. Mango should be soft but not mushy.

3. Serve with lentil crepe/dosa, on a charcuterie board, or with salad.

Mango Chutney

This light and summery appetizer is sure to please any dinner party guests this summer. Make it yourself, or head to the award-winning patio at Marine Tavern in Bronte Village!

 

MARIE ROSE SAUCE INGREDIENTS

  • 1/2L mayo
  • 100mL ketchup
  •  1/4oz tobasco
  • 1/8oz worcestershire
  • 1/2 lemon (lemon juice)

METHOD

  1. Combine all ingredients in a stainless steel bowl and mix thoroughly

PRAWN COCKTAIL POACHING INGREDIENTS

  •  1lb shrimp
    (21-25 shrimp)
  •  4tbsp salt
  •  1 tsp baking soda
  • 4L water
  •  1/2 bunch of celery
  •  12oz onion
  •  6 cloves garlic
  • 1/2 bunch parsley
  •  6g peppercorns
  •  2g bay leaf
  •  2 lemons

METHOD

  1. In a medium pot add 4 – 5 L of cold water
  2. In a stainless bowl add thawed raw shrimp, add baking soda and mix through, let stand 20 min covered in the fridge
  3. Rough chop celery, onion, parsley lemon, smash garlic
  4. Add to pot with salt, bring to a boil, simmer 10 min
  5. Add raw shrimp, and cook shrimp until opaque in colour. approx 2-3 min
  6. Strain shrimp immediately, and place into an ice bath to avoid overcooking

SALAD INGREDIENTS

  • 1 bag Heritage Lettuces
  • 1 pint Grape Tomato
  • 2 Avocados

METHOD

  1. Toss Lettuces with halved grape tomatoes, divide between 4 plates. Top with 5 or 6 shrimp liberally tossed in Marie Rose Sauce. Garnish each plate with ½ of a pitted avocado fanned out.

    Prawn Cocktail

    This refreshing appetizer is bursting with summer’s most iconic flavours like juicy watermelon, zesty citrus and spicy jalapeño. Though exclusive to Fresh Kitchen + Juice Bar’s summer menu for a limited time, this Watermelon Ceviche is easy to make and sure to be your go to for summer soirées to come. 

    Serves 4

    Ingredients

    • 9 oz watermelon, diced
    • ¼  avocado, diced
    • 0.75 oz red onion, minced
    • 2 g of cilantro, chopped
    • 0.75 oz jalapeños, sliced
    • 2 tbsp charred corn, roasted
    • 1 lime
    • ¾ tsp sea salt
    • ¼ tsp gochugaru
    • 6 g sesame seeds
    • Tortilla chips

    Method

    1. Dice your watermelon and avocado into ¼” cubes.
    2. Mince your red onions and slice the jalapenos.
    3. Roast your corn until browned. 
    4. In a bowl, mix diced watermelon, avocado, red onion, jalapeno, charred corn, freshly squeezed lime juice, salt and gochugaru.
    5. Gently mix ingredients together, being careful not to break down the watermelon.
    6. Plate your ceviche into a small bowl and top with cilantro. Garnish with sesame seeds and serve with tortilla chips.

    Fresh Kitchen + Juice Bar's Watermelon Ceviche

    Mexican Street Corn in a cup Corn in broth with adobo, aioli, and cotija cheese. This is a wonderful snack if you love Mexican street corn. Make it at home or enjoy it on the spring menu at Por Vida starting in May.

    Adobo sauce

    Ingredients

    (for approx. 1 L of sauce)

    • ½ spanish onion, roughly chopped
    • 2 cloves garlic, crushed
    • 6 chile guajillo, stemmed and seeded
    • 6 chile pasilla, stemmed and seeded
    • 2 lbs tomatoes, halved
    • 1 tsp dried tarragon
    • 1 tbsp dried oregano
    • 2 tsp cumin
    • 1 pce Mexican cinnamon
    • 2 tbsp vinegar
    • ½ litre water

    Heat a saucepan over medium heat. Add enough canola oil to just cover the bottom of the pan. Add in your onions and spices and sweat them out for 2 minutes. Proceed to add in your cleaned chiles and continue to cook another two minutes while stirring. Add in the tomatoes and let them cook until they begin to release their juices. Add in water and vinegar and simmer for 15 minutes. Blend the mixture and strain through a fine mesh strainer. Season to taste with salt only.

    Esquites   

    Ingredients

    • ½ kg corn kernels (fresh if in season or frozen)
    • ½ onion, finely diced
    • 2 chile morita (can omit if not available)
    • 2 cloves garlic, thinly sliced
    • ¼ cup adobo sauce
    • ½ litre water

    Heat a saucepot over medium heat. Add enough canola oil to just cover the bottom of the pan. Add in onions and chile morita and cook for two minutes. Add in garlic and cook a further two minutes. Add in the corn, water, and adobo sauce, and cook until just cooked through (5-10 minutes). Season with salt.

    Plating

    In Martini glasses, ladle in some of the esquites mixture. Garnish with a dollop of your favourite aioli, grated cotija cheese, tajin, cilantro, and some lime wedges. Encourage guests to squeeze the lime in and mix it all together.

    PorVida's Esquites: Mexican Street Corn in a Cup

    Coming straight outta Boston, this chowder is divine. Try it at home, or on the menu at studebaker anytime!

    Ingredients

    • ½ lb peeled Yukon gold potatoes, diced into ½ inch cubes
    • 2cups clam juice
    • 1lb shelled clam meat
    • 1-2oz of chopped bacon
    • 2oz white onion, diced small
    • 2oz of unsalted butter
    • 2oz all-purpose flour
    • 1cup of 35% cream
    • ½ tbsp Worcestershire sauce
    • 1tbsp tobasco sauce

     

    Method

    In a medium pot, brown the chopped bacon on medium heat, then add onions, reduce heat and cook until tender.

    Add butter to pot and melt. Once melted, add in the flour and stir until combined.

    Add clam juice slowly while stirring at the same time. Stir until all the clam juice is added and the mixture is smooth.

    Add potatoes and bring to a boil over medium-high heat, stirring occasionally. When mixture comes to a boil, reduce heat to medium and simmer for 10-15 minutes or until potatoes are tender.

    Add clams, Worcestershire sauce and Tabasco sauce.

    Add cream and stir until combined.

    Season with salt and pepper to taste.

    studebaker Pub & Diner's East Coast Clam Chowder

    These authentic Mexican Sopes are perfect for Cinco de Mayo, but can also be enjoyed anytime of year. They’re easy to make, and come in different sizes. Serve them  as a main course or an appetizer.  Almost all the ingredients are available at Nostalgia Latin Market, located in Kerr Village.

    Sopes De Chorizo Con Papa

    Ingredients

    • • 200g of Mexican chorizo crumbled*
    • • 3 medium size yellow potatoes, previously cooked, peeled & cut in small cubes
    • • 1 spoon of canola oil
    • • ¼ white onion, finely chopped
    • • Cilantro (coriander) finely chopped
    • • 1 Jalapeño pepper sliced.
    • • 1 can of refried pinto beans*
    • • 1 package of “Cacique” corn sopes*
    • • Panela cheese or Cotija cheese crumbled*
    • • Crema*

    ( *Available at Nostalgia Latin Market )

    Instructions 

    • In a hot frying pan, cook the Mexican chorizo until golden brown. Break the chorizo down with a wooden spatula until crumbled evenly. Add the potatoes, and finish cooking them. Integrate everything.
    • In another small frying pan, add the canola oil and sauté the onion until translucent, add the refried beans and integrate everything. Set aside.
    • To bake the sopes, spray a bit of cooking oil on each one and put them on a tray. Bake them for 20 mins at 400C turning once and until crispy.
    • Once the sopes are baked, add a thin layer of refried beans, add the Chorizo & potato, and then garnish with some cilantro, jalapeño, onion, crema and crumbly cheese. Top them off with any of the fresh salsas available from Nostalgia Latin Market. Enjoy!

    Espresso Energy Bites. Raw, Vegan and Gluten-Free

    Ingredients

    • 2 Cups Medjool pitted dates
    • 1/4 Cup freshly brewed espresso (to soak dates)
    • 1 Tsp vanilla
    • 2 Cups walnuts, finely chopped
    • 1 Dash salt
    • 1 Tsp cinnamon
    • 2 Tbsp raw cocoa powder

    Coating:

    • 3 Tbsp raw cocoa powder
    • 1 Tbsp freshly ground espresso beans

    Instructions 

    • Soak the dates in hot freshly brewed espresso for 30 minutes.
    • While the dates are soaking, combine the walnuts, cocoa, salt and cinnamon in a food processor.
    • Remove the dry mixed ingredients from the processor and then process the dates and vanilla to form a paste.
    • Return the dry mix to the processor and combine with the date paste.
    • Remove and freeze for 1 hour.
    • Finally, form your mixture into balls and roll them in the raw cocoa powder mixed with freshly ground espresso beans.

    Pear Champagne Vinaigrette - Over a green salad with radishes, blueberries & goat cheese

    Ingredients

    • 1/3 cup Olives en folie pear champagne vinegar
    • 1 teaspoon lemon juice
    • 1 clove garlic, crushed
    • 1/4 teaspoon fresh turmeric, grated
    • 1 teaspoon Labelle Miel honey
    • 1 teaspoon Dijon mustard
    • 2/3 cup Olives en folie California Arbosana organic extra virgin olive oil
    • 1 French scallion
    • Black Hawaiian salt & pepper

    Instructions 

    • Mix together the vinegar, lemon juice, honey, garlic, turmeric and mustard in a bowl until well combined.
    • Whisk in the olive oil and scallion.
    • Serve over a green salad, and add sprouted lentils, blueberries, sliced radishes and goat cheese.
