INGREDIENTS

  • 2 small onions (diced)
  • 2 celery stalks (halved & diced)
  • 12 cups dry bread crumbs (method below)
  • 2-4 cups water or dietrichs golden chicken broth
  • 2 cups Dietrichs old fashioned bacon (cooked and diced)
  • 1 cup mushrooms (sliced & cooked)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp basil
  • 1 tbsp oregano
  • 2 tsp ground sage
  • 2 tsp savoury
  • 2 tsp Dietrichs steak spice
  • 1 tsp garlic powder
  •  salt & pepper to taste

METHOD

  1. If you are making your own bread crumbs, preheat oven to 300F. Cut or tear any type of bread (brioche or french stick is our favourite) into 1/2 inch cubes. Place them in a single layer on a baking tray lined with parchment paper. Cook for 10 minutes – be sure NOT to brown or toast it.
  2. Preheat oven to 350F
  3. Place bacon in a single layer on a baking tray with parchment paper. Cook for 10 min per side. Chop bacon and set aside.
  4. In a large skillet at high heat, allow to get hot. DO NOT ADD any fat and add mushrooms to dry/hot skillet. They will “squeak” which is perfectly normal. Stir mushrooms until cooked – approximately 5-7 min. Allow to cool slightly.
  5. In the same large skillet – reduce to medium heat and add favourite fat (butter, tallow, oil). Add onion, celery, poultry seasoning; cook until tender (or onion becomes slightly translucent) – approximately 10-12 min. Allow to cool slightly.
  6. In a large bowl, combine bread crumbs, onion mixture, mushroom and bacon. Pour 1 cup of water (or broth) overtop and mix together. Add more water (broth) a little at a time until mixture is moist – but not soggy. Add salt and pepper to taste.
  7. Place mixture in a baking dish & cover with foil. Bake for 35 minutes. Uncover and bake for an additional 10 minutes or until brown on top.

Herb Provincial Turkey Stuffing

INGREDIENTS

(with Barnburner Whisky)
  •  1 ½ oz Barnburner Whisky
  •  ¾ cup hot water (around 175°F)
  • 2 tsp maple syrup
  • 2 tsp fresh lemon juice
  • 1 cinnamon stick
  • 1 clove or star anise
    (optional)

METHOD

Heat the water just below boiling, stir in maple syrup and lemon juice, then add Barnburner Whiskey. Garnish with a cinnamon stick and a clove. The whisky’s caramel and vanilla notes make this warming and beautifully balanced.

Spiced Maple Hot Toddy

INGREDIENTS

(with TAG Vodka) A smoother, lighter option with delicate spice.
  • 1 ½ oz TAG No. 5 Vodka
  • 1 cup hot water
  •  1 tbsp honey
  • 1 tbsp lemon juice
  •  5-6 whole cloves
  • 1 slice fresh ginger
  • Cinnamon stick and lemon wheel for garnish

METHOD

  1. Simmer water, cloves, and ginger for 15 minutes. Strain, then add honey and lemon juice.
  2. Stir in TAG Vodka just before serving so the alcohol’s delicate notes aren’t lost to boiling.
  3. Garnish and serve hot.

Vanilla Ginger Hot Toddy

Basil Brined Roasted Chicken Supreme

INGREDIENTS

  • ¼ 4 large chicken breasts
  • ¼ 2 tbsp salt
  • ¼ 2 tbsp sugar
  • ¼ 1 bay leaf
  • ¼ 1 clove garlic, smashed
  • ¼ 1 litre cold water
  • ¼ 1 cup boiling water
  • ¼ 4 oz fresh basil stems
  • ¼ Salt and pepper

METHOD

Combine boiling water, bay leaf, salt, sugar, basil stems and garlic and whisk until the salt has dissolved.

Pour the cold water mixture into the brine mixture and whisk, then place over top of the chicken breasts.

Allow chicken to brine for 1 hour and then drain as much water off as you can. Pat the chicken dry.

Season with salt and pepper and pan sear in oil in an oven proof pan until the skin is golden brown.

Place the pan in the oven and roast at 350 degrees until the chicken is cooked through. Allow it to rest for 15 minutes before slicing and serving.

Paradiso serve this dish with a honey-dijon carrot puree, garlic seared green beans, and a kalamata olive tapenade. At home, any mixture of fresh vegetables will pair nicely.

Caramelized Onion Bread Pudding

INGREDIENTS

  • 4 cups focaccia bread, cubed
  •  3 eggs
  • 8 oz Spanish onion, sliced
  • 1-1/2 cups 35% cream
  • 1/4 cup roasted garlic cloves
  • 1/2 cup fresh basil leaves, chopped
  • 3 tbsp grated parmesan cheese
  • 2 tbsp butter
  •  1 tbsp vegetable oil
  •  Salt and pepper

METHOD

Caramelize onions in butter and oil on medium heat until golden brown.

Add the roasted garlic and mash with a spoon until garlic cloves have broken down.Add the cream and bring to a simmer.

Combine the eggs, parmesan and basil in a bowl and slowly add in the cream mixture. Then add the bread and allow it to soak up mixture for 15 minutes.

Season with salt and pepper and place the bread in a parchment lined 2 inch deep baking pan and cover tightly with foil.

Bake at 350 degrees for 45 minutes. Allow it to cool before slicing.

Slice into portions and pan sear in butter until golden brown.

Oven Roasted Chicken Supreme

INGREDIENTS

  • 1/2 cup unsalted butter, at room temperature
  • 2/3 cup packed dark brown sugar
  • 1/3 cup molasses
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2¼ cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon ground cloves

METHOD

  1.  In a stand mixer, cream the butter and brown sugar. Add molasses, egg, and vanilla, and mix again.
  2.  In a separate bowl, whisk together flour, cinnamon, ginger, baking soda, salt, and cloves. Gradually add this to the wet mixture, mixing as you go. 
  3. Shape the dough into a ball, divide it in half, and flatten each half into a 1-inch disk. Wrap in plastic and chill for at least 2 hours.
  4. Preheat oven to 350°F and line two baking sheets with parchment paper.
  5. Roll out the dough on a lightly floured surface to ¼-inch thick. Cut out shapes with cookie cutters and place on prepared sheets, re-rolling scraps as needed.
  6. Bake one sheet at a time for 7–9 minutes, until edges are set but centers are still soft. For softer cookies, remove while slightly underdone (about 8 minutes for 3-inch cookies). You may need to adjust time based on your oven and cookie size.

The Sweetest Thing's Gingerbread Cookies

Ingredients

  •  1.5 kg russet potatoes (serves about 6)
  •  Duck fat or unsalted butter or olive oil (enough to form thin layer across your baking tray)
  •  5 or 6 garlic cloves
  •  1 bunch of fresh rosemary
  •   1 teaspoon of baking soda
  •  Cooking spray (optional)

Method

  1. Preheat the oven to 375ºF. 
  2. Peel the potatoes and cut into even sized chunks.
  3. Soak the potatoes in cold water for 5 minutes and drain to remove excess starch.
  4. Whilst the potatoes are soaking, spray a large baking tray evenly with cooking spray and add your fat – olive oil, butter or duck fat (in order of glutinousness). Place baking tray into the oven.
  5. Tip potatoes into a large pot, cover with lukewarm salted water. Add teaspoon of baking soda which helps to create fluffy edges. Parboil for 10 minutes, or until a fork can readily puncture each chunk, then drain in a colander.
  6. Leave to steam dry in the colander for 3 minutes and give it a shake until the potatoes form fluffy edges – this will help to make them super-crisp later on.
  7. Tip the potatoes into the now hot tray in one layer. Season well with salt and black pepper. Toss the potatoes in the fat, then roast for 30 minutes, or until lightly golden.
  8. Now’s the time for a key step. Gently squash each potato with a potato masher or spatula to increase the surface area – the more of your potato that’s in contact with the pan, the crispier it will be.
  9. Add rosemary, unpeeled garlic cloves and 1 good lug of oil to a small bowl. Mix until garlic and rosemary are evenly coated.
  10. Evenly distribute rosemary and garlic mixture with the potatoes and give the pan a good shake. Flip and gently squash each potato again, then pop back in the hot oven for 40 to 45 minutes, or until crispy and delicious.

CHOCOLATE COOKIE

INGREDIENTS
  • 2 cups all-purpose flour
  • 6 Tbsp cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 110g bittersweet chocolate, melted and cooled
  • ¾ cup unsalted butter
  • 1½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
METHOD
  1. Cream butter and sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium-high speed until light and fluffy, about 2 to 3 minutes.
  2. Reduce mixer speed to low and add eggs, one at a time, mixing until each egg is completely incorporated before adding the next. Mix in vanilla.
  3. Pour in lukewarm cooled chocolate and mix on low speed, scraping the sides and bottom of the bowl well, until batter is uniform in color. Add dry ingredients and mix on low speed until just incorporated.
  4. Scoop tablespoon sized balls of dough and place on a parchment lined sheet.
  5. Bake for 7-8 minutes at 350 or until just set in the middle
  6. Let cookies cool, and fill with Mint Buttercream.
  7. Drizzle melted chocolate over top and garnish with festive sprinkles!

 

MINT BUTTERCREAM

INGREDIENTS
  • 1 cup unsalted butter, room temperature
  • 1 Tbsp vanilla extract
  • 3 ½ cups powdered sugar
  • 1-2 Tbsp cream
  • 1/2 tsp mint extract
METHOD
  1.  Cream butter and sugar in the bowl of a stand mixer.  Gradually add in the cream until the frosting is a spreadable consistency.

Ingredients

2 cups All Purpose Flour

¾ teaspoon Salt

1 cup Butter, room temperature

½ cup Icing Sugar

 

Method

  1. Add all ingredients to the bowl of a stand mixer. Using the paddle attachment, mix on low speed until the dough comes together.
  2. Turn dough out onto a floured countertop. Roll out to ¼” thickness and cut into festive holiday shapes! Sprinkle with coloured sugar before baking if desired.
  3. Transfer cut-outs to a parchment lined baking sheet and bake at 325 degrees until lightly golden, about 12-15 minutes. Cool and enjoy!

Buttery Shortbread Cookies

When it comes to Christmas holiday traditions, making and decorating gingerbread houses is a staple tradition in many homes. This holiday season, MollyCake shared the following tips and tricks to decorate the perfect gingerbread house that your family is sure to be proud of!

Keeping It Simple

Buy a quality kit. If the house will be eaten, make sure it’s good quality. Small, local bakeries may be a bit more of an investment, but it’s usually worth it ten-fold when you take your first bite.

Buy more candy than you think you’ll need.
One for the house, one for the tummy …

Cover the table with a disposable tablecloth
for easy clean up.

Show Off A Little

Get the kit ‘FLAT’, as in, not already assembled.

If you want windows that are not already there, place the cookie panels in the oven on low for several minutes until soft. Remove and carefully cut out the windows as you wish while still warm. Enjoy the window cut out pieces while you wait for the panels to cool to decorate.

Ensure you have 2 consistencies of Royal Icing, building (holds its shape firmly but is still stir-able) and decorating (slightly thinner, but still holds its shape and is pipe-able without running or dripping). Add icing sugar or water, in tiny amounts at a time, to reach desired consistency.

Do not fill your piping bag more than 1/3 full (the rest should be set aside with a damp cloth over the bowl) – you’ll have more control. Cut a small hole in your piping bag, then cut it bigger for assembling.

Decorate the house panels flat, you have more control that way and can place your candy however you like.

Have patience! Let the front, side and roof panels dry thoroughly before assembling the house.

Bake your own gingerbread and download a template. Plan out where you want to cut your windows and doors.
Cut the windows and door out and remove the dough OR leave the pieces in there and pop them out when the cookie comes out of the oven. The gingerbread will hold its shape better this way.

Don’t forget to decorate your board, add a pathway, fencing, people, or use upside down ice cream cones to decorate as trees!
