2 cooking apples
1/3 cup sundried cranberries
4 eggs
1 and 1/3 cups vegetable oil
2 cups all purpose flour
2 cups white sugar
1 tablespoon baking powder
Spiced Rum Butter Ingredients:
1/2 lbs softened unsalted butter
1/4 cup icing sugar
1 fluid oz spiced rum
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon ground clove
1Peel and dice (1/2cm cubes) cooking apples
3Microwave apples and cranberries, covered on high for 5 minutes
5Drain and discard any excess liquid from the apples
7In an electric mixer, whisk eggs and sugar together on high for 1 minute
9Slowly pour vegetable oil into the egg mixture with the mixer running
11Reduce mixer speed to low and add apple mixture
13Add baking powder and sifted flour, scraping down the sides of the bowl with a rubber spatula
15Mix until all ingredients are evenly incorporated
17Pour mixture into a greased 9inch spring form pan
19Bake at 375 degrees Fahrenheit for 40 minutes or until a wooden skewer pull out clean
21Cool and serve with spiced rum butter and pumpkin panna cotta (recipe from previous issue)

25Mix all ingredients by hand in a mixing bowl until evenly incorporated
