
3/4 cup butter
1-1/4 cup pure creamed honey
2 organic eggs
1-1/2 cup almond butter
1 tsp pure vanilla extract (optional)
1 large sweet firm Ontario apple*, cored, peeled and cut into small cubes
3 cups whole wheat or spelt flour
1/4 cup ground flax
1 tsp baking soda
1/2 tsp salt
1 cup dark chocolate, chopped into small bits (minimum 70% cocoa) (can use 100 g bar)

Preheat oven to 350°F (180°C).

Line baking sheet with parchment paper.

In a large mixing bowl, with an electric hand mixer, beat butter, honey, eggs, almond butter and vanilla (optional). Stir in cubed apple.

In a separate bowl, add flour, flax, baking soda, salt and chocolate, mix using a fork.

Fold dry ingredients into bowl with wet ingredients until combined. Scoop a rounded tablespoon of batter onto a baking sheet lined with parchment paper (a finger space apart). Bake for approximately 10 to 12 minutes or until edges are golden brown.
