Combine all ingredients in a blender, season to taste and refrigerate until needed.
Using a mandolin or vegetable peeler, thinly slice the pear lengthwise.
In a small pot over medium-high heat, bring water and sugar to boil, stirring occasionally; continue boiling [do not stir] for 5 minutes. One by one, place slices of the pear in syrup and cook for 1 minute. Remove the pear slices with a slotted spoon and arrange them on a parchment-lined baking sheet in a single layer. Bake in 200Β°F (100Β°C) oven until crisp and dry, about 2 hours. Allow to cool completely on rack.
Place 1 tsp (5 mL) of goat cheese on each pear slice, top with walnuts. Drizzle with honey.
Makes approximately 20 pieces.
