The Sweetest Thing – Gingerbread Cookies

These tasty gingerbread men are easy to make and fun to decorate, and they make a perfect holiday treat. No time to bake? Head to The Sweetest Thing on Kerr Street and pick some up!

Ingredients:

  • 3/4 cup butter, softened
  • 1 cup packed brown sugar
  • 1 large egg, room temperature
  • 3/4 cup molasses
  • 4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1-1/2 teaspoons baking soda
  • 1-1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground cloves
  • 1/4 teaspoon salt

Method:

In a mixer, cream butter and brown sugar until light and fluffy, three minutes. Add egg and molasses.

Sift together flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. Cover and refrigerate until easy to handle.

Preheat oven to 350°. On a lightly floured surface, roll dough to 1/4 inch thickness. Cut with festive cookie cutters. Place on parchment lined baking sheets and bake until edges are firm, 8-10 minutes.
