Ingredients:
- 3/4 cup butter, softened
- 1 cup packed brown sugar
- 1 large egg, room temperature
- 3/4 cup molasses
- 4 cups all-purpose flour
- 2 teaspoons ground ginger
- 1-1/2 teaspoons baking soda
- 1-1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground cloves
- 1/4 teaspoon salt
Method:
In a mixer, cream butter and brown sugar until light and fluffy, three minutes. Add egg and molasses.
Sift together flour, ginger, baking soda, cinnamon, cloves and salt; gradually add to creamed mixture and mix well. Cover and refrigerate until easy to handle.
Preheat oven to 350°. On a lightly floured surface, roll dough to 1/4 inch thickness. Cut with festive cookie cutters. Place on parchment lined baking sheets and bake until edges are firm, 8-10 minutes.
