This refreshing appetizer is bursting with summer’s most iconic flavours like juicy watermelon, zesty citrus and spicy jalapeño. Though exclusive to Fresh Kitchen + Juice Bar’s summer menu for a limited time, this Watermelon Ceviche is easy to make and sure to be your go to for summer soirées to come.
Serves 4
Ingredients
- 9 oz watermelon, diced
- ¼ avocado, diced
- 0.75 oz red onion, minced
- 2 g of cilantro, chopped
- 0.75 oz jalapeños, sliced
- 2 tbsp charred corn, roasted
- 1 lime
- ¾ tsp sea salt
- ¼ tsp gochugaru
- 6 g sesame seeds
- Tortilla chips
Method
- Dice your watermelon and avocado into ¼” cubes.
- Mince your red onions and slice the jalapenos.
- Roast your corn until browned.
- In a bowl, mix diced watermelon, avocado, red onion, jalapeno, charred corn, freshly squeezed lime juice, salt and gochugaru.
- Gently mix ingredients together, being careful not to break down the watermelon.
- Plate your ceviche into a small bowl and top with cilantro. Garnish with sesame seeds and serve with tortilla chips.
