These Lemon Poppy Seed Cookies are the perfect summer cookie! Bake them at home, or pick some up at Sweet! Bakery in Bronte Village.
Ingredients
COOKIES:
- 1 cup unsalted butter, room temperature
- 1 cup sugar
- 2 eggs
- 4 tsp lemon zest
- 1 tsp lemon extract
- 2.5 cups flour
- 1 tsp baking soda
- ½ tsp salt
- 2 tbsp poppy seeds
GLAZE:
- 1 cup powdered sugar
- 4 tbsp lemon juice
Method
- Preheat oven to 350 degrees. Line 2 baking sheets with parchment paper and set aside.
- In a bowl or stand mixer, cream butter and sugar together. Beat in eggs, lemon zest and lemon extract.
- In a separate bowl, mix together flour, baking soda, salt and poppy seeds. Add to butter mixture and mix until fully combined but not overmixed.
- Use a medium cookie scoop to portion out 12-13 equal-sized balls and place on cookie sheet, spaced about 2” apart.
- Bake cookies for about 10-12 minutes until edges are slightly browned and firm and tops are domed. Let cookies cool.
- To make the glaze: whisk together powdered sugar and lemon juice until combined. Add additional sugar or lemon juice to reach desired consistency and drizzle over cooled cookies.
