Add all ingredients to a blender and blend until smooth.
Drain, rinse and de-seed the jackfruit.
Heat olive oil in medium saucepan on med-low heat.
Sauté garlic and red onions with a pinch of salt until till soft (approximately 5 minutes).
Add the jackfruit and ¼ cup of water to the pan and cook for 6-8 minutes on medium heat.
Add prepared BBQ sauce. Reduce heat to med-low and simmer for 45 minutes. Stir occasionally, using a wooden spoon to break up the jackfruit to give it a pulled texture. Slowly add ¾ cup of water throughout cooking time as the sauce reduces. Jackfruit is ready when the core of the jackfruit is fork tender and jackfruit has a pulled texture.
Spoon on to buns, serve as is or add toppings of your choice.
