Grilled Butterlied Branzino: With Sundried Tomato & Pine Nut Gremolota

HOW TO MAKE THE GREMOLATA:

  • 1/2 cup parsley leaves
  • 1 1/2 tsp capers
  • 2 tbsp + 2 tsp sun-dried tomatoes
  • 1 1/2 tsp finely diced shallot
  • Small pinch of lemon zest
  • 1/2 tsp lemon juice
  •  4 tbsp olive oil
  • Salt to taste

Grill the Branzino for 3 minutes each side. Add the gremolata and serve with your side of choice.
