Pub, a word conveniently shortened from the British term public house, is defined as an establishment licensed to sell alcoholic drinks. But for many, it has the deeper meaning of a meeting place or a place of social gathering. In many places around the world, especially in small English villages, the pub is the focal part of the community. Samuel Pepys, a British Member of Parliament and famed diary keeper, described the pub in the 17th century as being the “heart of England”. The Red Lion is the most common name for a pub in Britain where there are reportedly 656 establishments with this name.

Pubs date back to Roman times, when inns or taverns started popping up along the Roman road networks where travelers could obtain refreshments. When looking for the difference between a bar and a pub, reference is often made to Britain when referring to a pub, and the word has connotations of being a place to socialize, and not just to drink alcohol. A bar is often differentiated by having loud music and a dance floor.

Oakville and Burlington have many quaint and charming pubs where patrons can get a pint of English beer and meet up with friends. Nowadays, pubs have a huge range of beverages, from craft beers, fine wines and cocktails to gourmet food offerings, but there still seems to be a leaning toward a more British way. Items such as bangers and mash, and beef and ale pie appear frequently on menus as well as the quintessential British meal, fish and chips.

The King’s Arms (kingsarmsoakville.com) in downtown Oakville is one of the oldest pubs in the area. It was first opened in the mid-70s under the name “The Duke of Bedford” and changed its name to The King’s Arms in the ‘90s. The pub specializes in craft beer with an extensive range of products and offers traditional British food  such as steak and Guinness pie, as well as more trendy fusion items such as truffle brisket mac and cheese. 

The Abbey Arms (abbeyarmspub.ca) located in Glen Abbey, Oakville, has a specialty brunch menu on weekends for earlier diners, and also caters to vegetarians with its house-made chickpea and cauliflower curry.

The Queens Head (thequeensheadoakville.com) in downtown Oakville offers an authentic pub atmosphere and is reputed to serve the best fish and chips in the area.  Be prepared to wait for a table on a Friday night.

Not to be outdone, The Queen’s Head (the queenshead.ca) in downtown Burlington opened its doors in the 1990s and specializes in house pub pies. It also features traditional pub fare such as beef liver with bacon and onions. It hosts events throughout the year, including celebrating St Patrick’s Day.

The Pipes and Taps Pub (thepipesandtapspub.com) in Oak Park, Oakville also varies its food offerings from a trendy warm tandoori spiced Atlantic salmon salad to classic bangers and mash.

at Neyagawa and Dundas in Oakville, is certainly a beer destination but also offers game-day breakfasts and screens anything from the Leafs game to premier league soccer. They offer traditional fare like bison shepherd’s pie and also signature items such as Monk wings or Monk nachos.

In downtown Burlington, you’ll find Burlington’s oldest English Pub and Alehouse – The Poacher (thepoacher.ca). Also downtown is The Dickens Pub (thedickens.ca), where you can bite into half-price wings on Tuesday or sip $5 Caesars on Saturday before 6 p.m.

With St Patrick’s Day approaching, it is worth scouting out your nearest pub to make sure you don’t miss out on all the fun – and all the green beer. Throw on your most festive Irish gear and be prepared for everything from St. Patty’s inspired dinner specials, Irish dancers, and simply, a bangers and mash good time.

Meet Koosh Kahnamoui and Stephen Sankar of Kamoosh Bistro in Waterdown.

You’ve travelled a lot, did you pick up any culinary inspiration abroad?

After working in 2 fabulous restaurants – Hôtel Le Germain and La Société – in Toronto while my girlfriend Kira was finishing her University degree, we decided to take the opportunity to travel.

I was fortunate to explore and learn new culinary techniques and flavour profiles travelling through 8 countries in Asia.

Settling in Australia for over a year, as Chef de Partie in a small bistro in Perth I experienced a passion for scratch cooking with fresh local produce, seafood and meats.  We drove across Australia and I grew my love for Italian cuisine as a Sous Chef in a creative Italian Restaurant on the East Coast.

What brought you back to Waterdown?

Cutting our travel short, I was privileged to spend quality time with my grandmother in her remaining months.

I was excited to learn that in my absence Kamoosh Bistro had been created and I could learn and expand my culinary journey with a restaurant that focused on my own belief of fresh, made from scratch, quality ingredients.

Remaining near my family and hometown of Waterdown was a wonderful added bonus.

Where do you look for inspiration?

Inspiration comes on a daily basis, whether it’s from different cultures, smells, sights – we infuse that inspiration into classic italian recipes. Our mantra has always been that food should have balanced flavours – and simple food tastes best.

Where do you source your ingredients from?

We work with local farms and source special ingredients, like aged balsamic or Parmigiano-Reggiano, directly from Italy. We make absolutely everything in-house. You can tell that it’s been made from scratch.

There’s a feeling of joy that comes when you step into Familia Fine Foods. From the warm smile Juliana Berrio flashes when you walk through the door to the rustic décor and Columbian charm, the space alights your senses. It all seems so organic – the welcome, the food, the atmosphere – and that’s because owners Luis Velasquez and Juliana Berrio inject their culture and love of family into every aspect of their home away from home. 

When Luis and Juliana were working long hours in the corporate world, they had an epiphany – that life is short and doing something fulfilling is more important. So, in 2014 they walked away from their careers in finance and not-for-profit work to start Familia Fine Foods, and it was the best decision they ever made.

While Juliana runs the front of the house and manages catering orders, her husband, Luis, is behind the counter preparing favourites – and everything is made fresh in house. 

Our meal began with their in-house iced tea, made with natural cane sugar. It was subtle and refreshing and the perfect pairing to the meal. We immediately dug into our tacos – a special every Tuesday. The taco shell was soft and fresh, adorned with chicken, guacamole, pico de gallo, sour cream, and feta cheese. This symphony of flavours worked flawlessly together and satisfied our pallets on every level.

Next, we had a sampling of desserts. Three generous portions were presented across a wood plank, begging us to dig in. First was the passionfruit cheesecake –  an exotic, lighter touch to a traditional cheesecake. Smooth and creamy, tropical and fragrant – it’s clear that passionfruit and cheesecake were always meant to be together.  From the cheesecake, our forks were pulled towards the bread and guava cake. Light, moist and packed with guava, this cake paired beautifully with coffee.  Last was the poster tres leches, a king among them all. Drenched in milk this delicate sponge cake manages to soak up tons of liquid while remaining solid enough for you to dig into its crumb with a fork. Fluffy and delicious, it certainly lived up to its expectations.

Where do you source your beans?

We source our beans directly from quality driven small-scale producers in El Salvador. By engaging in a Direct Trade model we can offer an additional level of transparency to our customers of the specific farm the beans come from, the bean varietal, drying method, altitude. To the coffee producers direct trade enables them to be independent of the disastrous commodity market that for decades has kept the coffee prices low therefore not allowing sustainable production. 

What is your philosophy behind farming?

We promote sustainable farming which is an integral concept that takes into consideration not only the protection of the forest and water resources by growing coffee under the shade of the trees, but also the protection of local economies by paying fairly and employing local people, predominantly women, to harvest and process the coffee by hand.

What was the inspiration behind the Firebat brand?

We started this journey in El Salvador which is part of a bigger region called Mesoamerica once known as the Mayan empire. In the Mayan mythology the bat means change; letting go of the old to create space for new to come. In the coffee farms, bats are also an integral part of protecting coffee forests by keeping insects at bay. El Salvador is known as the land of fire with numerous active volcanoes and coffee thrives on volcanic soil, hence our name Firebat.

What’s your favourite roast that you carry?

We are proud of all our coffees, each of them has a solid place in the coffee flavour wheel and their own target audience. If we had to choose, our favourites are coffees from Shangrila and La Roxanita farms because of their flavour complexity.

Meet The Chef, David Neinstein of Barque Smokehouse in Burlington. We sat down with him to ask him about the inspiration about Burlington’s new smokehouse.

Where did you learn to cook?

I started cooking at my father’s knees, literally. He’s a lawyer with a lifelong passion for cooking that began in the Julia Childs/Craig Claiborne years when cooking became accessible, fun and frankly, cool. But he had a day job. From there I grew up entertaining friends and family from the kitchen, slowly taking over from my father. He taught me a lot, but most of all, to be a great host and to put my guests first.


 

Where do you source your ingredients?

All of our ingredients are sourced as locally as possible for freshness and, as our menu changes regularly, for seasonality. Our pork is collected from select farms in Quebec that create a specific cut of rib just for us. Our beef is from the finest ranches in Alberta and our chicken is delivered fresh three times weekly from an Ontario grower. Vegetables are seasonally purchased and we always buy from the closest farms possible.

What was the inspiration behind Barque?

My partner Jon and I were craving more upscale BBQ. We wanted a glass of wine and fresh vegetables with the classic meats. We love ribs and brisket and desired a balanced and more refined dining experience that was chef driven, never frozen and always fresh.


 

Why Burlington?

Burlington is a great city of diversity. It’s close to our Roncesvalles location, within reasonable driving distance of both Oakville and Hamilton and has the best reputation in the Golden Horseshoe for being business friendly and boasting a family-oriented community. Besides, we saw that there wasn’t a lot of BBQ around.

Who do you look to for inspiration?

Outwardly, we rely on our travels, eating everywhere from the great BBQ shacks of the world to the Michelin-starred restaurants of Manhattan. Inwardly, we believe in giving people what they’d like and are constantly experimenting with ideas based on our guests’ suggestions and preferences.

What’s your favourite dish on the menu right now?

I am eating our Cajun Smoked Dry Rubbed Wings the most lately. Our Chef Josh suggested the pairing and I’ve loved them ever since.

Where did you learn to cook?

I studied at the Bonnie Gordon School of Confectionary Arts, but I’m mostly self-taught through hours upon hours of experimentation.

What was the inspiration behind MollyCake?

My son wanted a Cookie Monster cake for his birthday. I decided to take on the challenge and loved it. Soon friends were asking me for cakes and the business grew from there.

Where do you source your ingredients?

We buy local as much as possible, and almost everything is made from scratch with no artificial flavours. For example, when we make lemon curd, we buy a box of lemons and squeeze them ourselves – you can taste the difference!

What’s your favourite dish on the menu?

I love the Canelle. It’s a cross between a Choux pastry and custard – crisp on the outside and soft in the middle. You need to try one!

Where do you source your ingredients?

We proudly source our ingredients as locally as possible. We consciously search for organic and the freshest items from specialized vendors that comply with OKO’s high-quality standards.

What was the inspiration behind OKO Bagels?

Our inspiration behind OKO Bagels is rooted in the idea of bringing back traditional baking methods. That’s why we use a wood burning oven and we roll our dough every day from scratch without preservatives. We want people to come and get fresh bagels every day … just like in the old days!

Karina: Caprese Sandwich on a Rosemary & Sea Salt Bagel. The aroma of the rosemary brings back good memories from my childhood.

What was your inspiration for Piazza Bistro?

Piazza Bistro’s inspiration comes from the restaurant name itself, Piazza. In Italy a Piazza is an open public space found in the heart of a town that is used for community gatherings. That is what Piazza Bistro is, a place to spend time and celebrate with great food, friends and family.

What are you excited for this holiday season?

We’re excited to host holiday parties in our private dining room. It means a lot to us that our customers choose to spend time with their friends, families and co-workers at our restaurant – especially during the busy Christmas season.

Where did you source this stuff?

Most came from our personal collection, and every item has a story. The room is an eclectic
bohemian extension of the minimalistic décor in the downstairs dining room. The décor allows our guests to feel comfortable and at home while spending time with us.

We’re passionate about using fresh local ingredients. There are several key items on the menu that we have become known for, but it is with our daily chef’s features where local ingredients are utilized to create authentic wholesome Italian meals.

Neither, we prefer Mulled Wine during the holidays. After all, it did originate in Rome. Stop by for a glass!
